First off, welcome to the best collection of info and people related to the 968!
Second, sorry, but I don't have an answer for you on your noise...I was going to suggest exhaust manifold gasket(s), but that wouldn't correspond to the starter on/off. My car needed lots of things tightened here and there so perhaps it's just something a little loose.

Welcome to the world of 968 and 968Forums.
As for your sound, I've never noticed the one you speak of but I have notice a release of pressure when shutting down; could this be some sort of relief valve (bleed of compression) to aid in starting???
