Odd set of symptoms. My thoughts for what they are worth. There are a lot of mix and match parts that will fit our car from Porsche's use of a standard mounting, etc. I've had two different clutches in my car and they both worked OK. My car came with the 3000#+ clamp force pressure plate. Don't remember the part number, but I think it was the -132. Though I disliked how much pressure it took to depress, it functioned well. Though a lot on this forum prefer the green strip pressure plate, I have the -133 pressure plate, and I'm quite happy with it (I think it might have the blue stripe). The 3000#+ pressure plate did seem to chatter a bit when I was just starting to let it out. Could it be this is what you mean by slippy. Where it shudders as the clutch is released? As I recall, this shudder can also be caused by oil, or the like getting on the friction material of the clutch disc.
As far as the noise when shifting, could be something with the throughout bearing, as it is engaged during a shift, applying force to unclamp the clutch. Otherwise it is unloaded. Could be something with it. I assume it was replaced during the clutch job.
Edit: One last thought. Does your car have a limited slip differential, option 220. Limited slips can sometimes make a car feel a little funny when going around a corner slowly, especially when starting up. I've had them where they didn't, and have had them where they did feel a little odd. I think it has something to do with the action of the clutch pack in the differential and how smooth it acts. How bad was your clutch before. Could it have been so bad that it masked the feel of the differential on slow corners.
