After installation of the full RS Barn exhaust/chip system I will probably visit my local dyno shop, which has a Land and Sea in-floor system. Never heard of this one: how do the numbers tend to run?

I don't have any experience with that brand, but according to the literature, they say that they can do absorption tests as well as accelerative tests. An absorption test is much more like a "real" dyno as it allows you to maintain a selected RPM for an indefinite time period. Particularly useful of you had to diddle with a programmable ECU.
Most other chassis dynos can only do accelerative tests and use calculations to derive HP and torque. Absorption tests can measure this directly.
