Don't know that it necessarily counts as Christmas music, but as I write this I am listening to Rachmaninoff's vespers service. Sung a cappella in Russian, it is simply stunning. It has become my late Christmas night favorite, best listened to with a good glass of wine and tonight that is a 10 year old super Tuscan.
