I was wondering if 968 can use those 100 bar ZF steering pumps instead.

Lets see. A standard 110 Bar pump puts out a maximum pressure of 1595 PSI compared to the 100 bar @ 1450 PSI. In a street only situation, I doubt you will feel much of a difference unless you have wider tires or larger wheels or drive aggressively. During everyday driving, the pump is putting out far less than maximum. If you do feel the difference, you will be putting an increased load on the steering shaft joint, which is not a good thing. You want the gear to do the work during a turn, not the steering shaft.
